Electrolux Professional Chinese Turnip Cake Recipe

Ingredients

(Makes ~10 portions)

  • 1kgWhite Radish (Daikon) – Grated using 4mm grater
  • 35g Dried Shrimp – Soaked and chopped
  • 40g Dried Shiitake Mushroom
  • 35g Chinese Sausage – Diced finely
  • 3 cloves of Garlic – Chopped
  • 2 tbsp Vegetable Oil – For the baking pan
  • 1tsp Sesame Oil
  • 230g Rice Flour
  • 2 tsp Chicken Stock
  • 350ml Water
  • 1/2 tsp White Pepper – For garnish
  • Spring Onion – For garnish (as required)
  • Fried Onion – For garnish (as required)
  • Fresh Chili – For garnish (as required)

Preparation

Horizontal Cooking XP

  • Fry Garlic, Dried Shrimp till aromatic
  • Combine Dried Shiitake and Chinese Sausage and fry further till flavours are release
  • Gently add in the the grated White radish and stir fry. Water will be naturally be release from the White radish
  • Add Chicken stock & Sesame oil and Cover with a lid and cook it for 10 mins on medium heat
  • Mix Rice flour and Water together, strain the mixture to ensure there are no lumps
  • Combine Rice flour mixture into the rest of the and stir well

SkyLine Cook & Chill

  • Oil the Cake tin with cooking oil
  • Place mixture in the Cake tin and spread evenly as much as possible
  • Place Turnip cake in Skyline PremiumS and Steam for 20 min
  • Using the SkyDuo function after the steaming is done place the Turnip cake in the ChillS to cool down and to allow it to set till its firm so it will be easier to cut into 1cm thick slices

XP Chrome Fry Top

  • Sear Turnip cake slices till well brown
