Ingredients

Yellow noodles 1kg

Bean sprout 120g

Chilli Padi (chopped) 2pcs

Fish balls (sliced) 20pcs

Choy Sum (4cm chopped) 400g

Tomato cubes 100g

Onion cubes 100g

Chicken breasts (thinly sliced) 200g

Deshelled prawns (washed & drained) 300g

Scramble egg (pre-cooked) 250g

 

Cooking oil 50g

Minced garlic 20g

Tomato ketchup 50g

Chilli sambal 50g

Oyster sauce 65g

Kicap manis (sweet soy sauce) 45g

Fresh coriander 20g

Lime (cut in quarters) 2pcs

Fried shallots 50g

Ground roasted peanuts 20g

Preparation

1. Combine all the liquid ingredients in a bowl and mix well
2. Combine garlic and oil in a bowl and mix well
3. Take a GN tray of one-inch depth and layer as follow: noddles, Chye Sum, egg, bean sprouts, chili padi, tomatoes, onion, fishballs, chicken breasts, prawn, garlic oil
4. Put the tray into SkyLine combi oven PremiumS and cook in combi mode for 4 minutes (temp. 190 Celsius degree, fan speed 4, humidity 100%). Take out the tray to mix with soy sauce mixture
5. Put back to the oven to finish the cooking process (temp. 190 Celsius degree, fan speed 4, humidity 20%)
6. Mix well, add the toppings and serve hot
