A Journey of Flavors Between the Sea and Luxury at Four Seasons Hotel Firenze
Onde is located in the Renaissance Palazzo Del Nero, overlooking the magnificent Giardino della Gherardesca, just across from the building housing the Four Seasons Hotel Firenze, a symbol of the city’s luxury hospitality.

This restaurant was born from the idea of Executive Chef Paolo Lavezzini, who has been leading the hotel’s culinary team for over three years.
As he himself explains: “We wanted to bring a restaurant to Florence that focused on fish, the sea, and the Italian coastline, in a context where Tuscan regional cuisine is typically dominated by meat and other traditional dishes.”

In just 8 months, we managed to completely transform the space that once served as the breakfast room, creating two kitchens: the show kitchen, Onde, featuring a stunning Molteni, and Risacca, a production kitchen equipped with thermaline, which supports the show kitchen during events and peak periods.
The show kitchen is the main kitchen, capable of serving up to 150 covers per day, and is designed to be visible to guests, offering them a kitchen performance. Another element we gave considerable thought to was the kitchen’s color. We wanted a tone that evoked the sea, but at the same time had to respect the aesthetic requirements of a historic 1500s palace. We chose a blue reminiscent of grey. A specific RAL color, Pigeon Blue, was selected, and then adapted by the architect to create the tiles, crafting an environment that speaks of the sea with discretion and elegance.

“The equipment is a fundamental part of our work, and with Molteni, we are truly satisfied. Due to some logistical difficulties in positioning, the kitchen block arrived in two parts. When I saw it dismantled, it was a blow to the heart, but fortunately, I knew there was a happy ending. Once positioned, the top was welded, transforming the block into a perfect and functional monoblock,” continues the Chef.

“For us, it was essential that the kitchen was not only functional but also aesthetically pleasing for the view of our guests. Choosing Molteni, the icon of bespoke high-end kitchens, was a natural decision,” says Executive Chef Paolo Lavezzini.
