EHL, the world’s leading hospitality and business management school in Lausanne, blends academic excellence with hands-on learning. Its new vegan restaurant, Shadwood, reflects this approach. Designed and equipped with Electrolux Professional, the kitchen was created in just two months, giving students access to advanced equipment.
Founded in 1893, EHL is now a global group with campuses in Lausanne, Passugg, and Singapore. Gastronomy remains central, with several training restaurants on the Lausanne campus, including the Michelin-starred Berceau des Sens.
Shadwood introduces a sustainable, 100 percent plant-based concept. Developed by students and planned by Kitchen Outlets Manager Jérôme Zbinden, it unites functionality, innovation, and long-term vision.
