Mediterranean Muffin

  • 800gr gluten free flour
  • 200gr almond flour
  • 570gr extra virgin olive oil
  • 570gr eggs

Chocolate Muffin

  • 800gr gluten free flour
  • 100gr unsweetened cocoa powder
  • 520gr seed oil
  • 520gr eggs
  • 200gr melted chocolate or chocolate ganache
  • 510gr chocolate chips


Put all the ingredients in a kneader: Half a minute at slow speed, 3 minutes at fast speed.
The result is a liquid dough, like a cream. Put it in the muffin molds with the sac a poche.
You can put the muffin in the freezer to preserve them or cook them directly, add almonds or chocolate chips and granulated sugar.
Bake at 350°F (180°C) for 40 minutes if the product is frozen or 30 minutes if the product is fresh.
