Ingredients

  1. 10 lbs black eyed peas
  2. 4 lbs collard greens (chopped)
  3. 1 kg onion (diced)
  4. 450 grams bacon (diced)
  5. 100 grams garlic (minced)
  6. 200 grams olive oil
  7. 2 gallon chicken stock
  8. 250 grams salt
  9. 37 grams black pepper
  10. 4 lbs diced tomato
  11. 8 bunch parsley (chopped)

Procedure

  1. Heat the Pressure Braising Pan to 410°F.
  2. Add in the oil and begin to cook out the onions.
  3. Next add the garlic, bacon, and tomatoes.
  4. Add all of the remaining ingredients and allow it to come to a boil while stirring consistently.
  5. Once the liquid has come to a full boil, lock the lid down to go under pressure.
  6. Set the timer for 30 Minutes.
  7. Depressurize the unit per manual operating instructions.
  8. Stir in the parsley and enjoy.
