Ikv\u00e4ll f\u00e5r 90 inbjudna g\u00e4ster m\u00f6jlighet att prov\u00e4ta och betygs\u00e4tta den t\u00e4nkta menyn p\u00e5 plats hos Electrolux HK i Stockholm. Vi fick en pratstund med Fredrik Andersson, ledare f\u00f6r kocklandslaget, om hur tankarna g\u00e5r inf\u00f6r Culinary Olympics 2020.[\/elx_heading][vc_empty_space][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text drop_caps=&#8221;big-first-letter&#8221;]<\/p>\n<h4><strong>Hur \u00e4r k\u00e4nslan och st\u00e4mningen i svenska kocklandslaget just nu?<\/strong><\/h4>\n<p>\u201dDet \u00e4r ett v\u00e4ldigt laddat g\u00e4ng! Ingen som har hamnat p\u00e5 latsidan direkt utan snarare gav VM-guldet extra energi till att forts\u00e4tta driva utvecklingen. Vi har satt ribban h\u00f6gt och g\u00e5r in f\u00f6r guld i Culinary Olympics, givetvis g\u00e4ller det d\u00e5 att alla verkligen ger sitt allra b\u00e4sta. Vi l\u00e4gger den tid som kr\u00e4vs f\u00f6r detta och det \u00e4r mycket.\u201d<\/p>\n<p>&nbsp;<\/p>\n<h4><strong>Kocklandslaget har f\u00e5tt n\u00e5gra nya lagmedlemmar?<\/strong><\/h4>\n<p>\u201dJa precis, j\u00e4ttekul! Nytillkomna \u00e4r Anders Isaksson (kock), Ludwig Tj\u00f6rnemo (kock) och Anton Husa som \u00e4r konditor. Dessutom har vi tre nya commis: Matilda Pylkk\u00f6, Matilda Ewaldh och Hanna Claesson som kommer att vara med oss hela v\u00e4gen fram till Culinary Olympics. Tjejerna har rekryterats till kocklandslaget via Malin S\u00f6derstr\u00f6ms\u00a0stipendium. Syftet med stipendiet \u00e4r att \u00f6ka antalet kvinnor i t\u00e4vlingsk\u00f6ken och p\u00e5 sikt bryta mansdominansen. Vi \u00e4r enormt n\u00f6jda med de nya tillskott vi f\u00e5tt in i svenska kocklandslaget och sj\u00e4lvklart bidrar det \u00e4ven med extra energi att f\u00e5 in nya m\u00e4nniskor.\u201d<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h4><strong>Vad \u00e4r annorlunda i Culinary Olympics j\u00e4mf\u00f6rt med VM?<\/strong><\/h4>\n<p>\u201dSt\u00f6rsta skillnaden rent t\u00e4vlingsm\u00e4ssigt \u00e4r att kalla bordet f\u00f6rsvinner. Ist\u00e4llet har vi ett sk Chef\u2019s table, en \u00e4tbar buff\u00e9 som ska tillagas fr\u00e5n grunden till 12 g\u00e4ster p\u00e5 5 timmar. Det sv\u00e5ra \u00e4r att hinna med alla olika moment som beh\u00f6ver g\u00f6ras p\u00e5 den korta tiden. Dessutom ser domarna \u00e4nnu h\u00e5rdare p\u00e5 matsvinn d\u00e5 detta \u00e4r n\u00e5got som ligger med i bed\u00f6mningsgrunden. Vi jobbar aktivt med att minimera matsvinn, att alltid ber\u00e4kna m\u00e4ngd r\u00e5varor noggrant och inte bara \u201dsafea\u201d genom att ta en extra r\u00e5vara. I Culinary Olympics \u00e4r det ocks\u00e5 fler lag som t\u00e4vlar \u00e4n i VM, totalt 40 l\u00e4nder fr\u00e5n hela v\u00e4rlden. Detta arbete p\u00e5b\u00f6rjade vi egentligen redan innan VM, men nu l\u00e4gger vi \u00e4nnu mer resurser p\u00e5 att prata mer med producenter och att komma n\u00e4rmare dem; allt f\u00f6r att f\u00f6rst\u00e5 r\u00e5varorna b\u00e4ttre och f\u00e5 de allra b\u00e4sta. Kvalit\u00e9 \u00e4r extremt viktigt. Vi f\u00f6rs\u00f6ker \u00e4ven bygga kunskap kring den utrustning som beh\u00f6vs f\u00f6r att tillaga r\u00e5varorna. Det \u00e4r viktigt att vi l\u00e4r oss hur vi anv\u00e4nder den p\u00e5 b\u00e4sta s\u00e4tt f\u00f6r att kunna nyttja m\u00f6jligheterna till fullo. I juni \u00e5ker exempelvis flera av oss i kocklandslaget ned till Electrolux Professionals huvudkontor f\u00f6r att f\u00e5 l\u00e4ra oss mer om tillagningsm\u00f6jligheterna med <a href=\"https:\/\/www.electroluxprofessional.com\/se\/food-professionella-storkok-och-restauranger\/cook-and-chill\/\">SkyLine<\/a>, det blir v\u00e4ldigt sp\u00e4nnande!\u201d<\/p>\n<p>\u201dYtterligare f\u00f6rberedelser \u00e4r att vi f\u00f6rs\u00f6ker h\u00e5lla oss i s\u00e5 god fysisk och psykisk form som m\u00f6jligt. Vi k\u00f6r ju 9 timmar i k\u00f6ket under upplagningar s\u00e5 det \u00e4r en stor anstr\u00e4ngning p\u00e5 m\u00e5nga s\u00e4tt. Varje vecka tr\u00e4nar hela kocklandslaget d\u00e4rf\u00f6r tillsammans med PT, b\u00e5de f\u00f6r den fysiska konditionens skull, men \u00e4ven som en form av teambuilding aktivitet. Teamet \u00e4r otroligt viktigt och vi jobbar h\u00e5rt med att f\u00e5 ihop gruppen. Det \u00e4r viktigt att vi f\u00e5r lov att g\u00f6ra saker ihop som inte enbart har med mat att g\u00f6ra. Under v\u00e5r f\u00f6rsta tr\u00e4ff efter VM s\u00e5 fokuserade vi inte p\u00e5 mat \u00f6verhuvudtaget, utan arbetade enbart med gruppens sammanh\u00e5llning, bland annat genom att spela curling och ut\u00f6va r\u00f6relsetr\u00e4ning ihop.\u201d<\/p>\n<p>&nbsp;<\/p>\n<h4><strong>Hur t\u00e4nker ni rent smakm\u00e4ssigt med r\u00e4tterna till t\u00e4vlingen?<\/strong><\/h4>\n<p><strong>\u00a0<\/strong>\u201dI grunden arbetar vi med svenska smaker och anv\u00e4nder alltid nordiska r\u00e5varor.\u00a0 Men vi f\u00f6rs\u00f6ker alltid att influera dessa smaker med andra k\u00f6k i v\u00e4rlden.
