It optimises preparation times and standardises processes, as well as assuring optimal food safety.<\/p>\n<p>Undeniably, there are many advantages to using a process, but a number of issues still have to be considered. Because having a cook and chill system in the kitchen does not just mean buying an appliance or two \u2013 <strong>the workflow also must be set up correctly<\/strong>.[\/vc_column_text][vc_empty_space][\/vc_column][\/vc_row][vc_row][vc_column][elx_heading text_color=&#8221;inherit&#8221;]Cook and Chill process: things to consider\/watch out for[\/elx_heading][vc_empty_space height=&#8221;16px&#8221;][vc_column_text]<strong>The cook and chill process offers a variety of features and benefits<\/strong>, including:[\/vc_column_text][vc_empty_space height=&#8221;16px&#8221;][\/vc_column][\/vc_row][vc_row][vc_column][elx_heading font_container=&#8221;h3&#8243; text_color=&#8221;inherit&#8221;]1. Food safety[\/elx_heading][vc_empty_space height=&#8221;16px&#8221;][vc_column_text]The process delays bacterial and other pathogens\u2019 growth as food goes through the so-called \u201cdanger zone\u201d (between +8 \u00b0C and +68 \u00b0C) more quickly. This means that <strong>food is safe to be stored for days<\/strong> without fear of its flavour being compromised, consequently extending its shelf life.[\/vc_column_text][vc_empty_space height=&#8221;16px&#8221;][elx_heading font_container=&#8221;h3&#8243; text_color=&#8221;inherit&#8221;]2. Reduced labour costs[\/elx_heading][vc_empty_space height=&#8221;16px&#8221;][vc_column_text]The cook and chill process allows chefs and kitchen staff to <strong>portion and group together food preparation workflows<\/strong>; it allows the standardisation of most operations, which means <strong>more efficient use of labour<\/strong>.<\/p>\n<p>However, to save with cook and chill, workflows must be correctly and efficiently planned. This means <strong>being aware of the capabilities that new appliances offer and the best way to use them<\/strong>: savings will be small if the appliances are more productive, but workflows are still inefficiently planned. Your savings will increase with ergonomically designed appliances and efficiently designed workspaces, but <strong>no appliance can revolutionise a poorly planned kitchen workflow<\/strong>.[\/vc_column_text][vc_empty_space height=&#8221;16px&#8221;][elx_heading font_container=&#8221;h3&#8243; text_color=&#8221;inherit&#8221;]3. No food wastage[\/elx_heading][vc_empty_space height=&#8221;16px&#8221;][vc_column_text]If used correctly, cook and chill <strong>extends the products\u2019 shelf life<\/strong>, so food can be preserved for several days and <strong>will not go to waste<\/strong>. After the process has taken place, <strong>all dishes keep all their essential characteristics<\/strong>: flavour, texture, appearance and nutritional value are rated just the same as freshly cooked food.<\/p>\n<p>Shelf life of food is increased if the critical control points of each step of the process are respected; otherwise, there is a risk of being forced to throw away food. Two hints:<\/p>\n<ul>\n<li>Familiarize yourself with cook and chill appliances, to understand their capabilities: capacity, proper operating care, maintenance<\/li>\n<li>Again, take great care in food preparation and cooking workflow.<\/li>\n<\/ul>\n<p><strong>Food safety is the most important feature, but the process requires some attention.<\/strong>[\/vc_column_text][vc_empty_space height=&#8221;16px&#8221;][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_empty_space height=&#8221;16px&#8221;][vc_single_image image=&#8221;24916&#8243; img_size=&#8221;large&#8221; alignment=&#8221;center&#8221;][vc_empty_space height=&#8221;16px&#8221;][\/vc_column][vc_column width=&#8221;1\/2&#8243;][elx_heading font_container=&#8221;h3&#8243; text_color=&#8221;inherit&#8221;]4. Chilling time[\/elx_heading][vc_empty_space height=&#8221;16px&#8221;][vc_column_text]The blast chilling process must be fast enough to avoid giving pathogens the chance to develop, but slow \u2013 or rather, controlled \u2013 enough to avoid food spoilage. <strong>Blast chilling is a method of cooling food very quickly<\/strong>, bringing it to a much lower temperature which makes it <strong>safer from bacteria growth<\/strong>. In fact, bacteria tend\u00a0 to multiply faster in temperatures between +8 \u00b0C and +68 \u00b0C. A blast chiller allows you to reduce the temperature of cooked or heated food from +70 \u00b0C to +3 \u00b0C <strong>within 90 minutes<\/strong>.[\/vc_column_text][vc_empty_space height=&#8221;16px&#8221;][\/vc_column][\/vc_row][vc_row][vc_column][elx_heading font_container=&#8221;h3&#8243; text_color=&#8221;inherit&#8221;]5. Process control[\/elx_heading][vc_empty_space height=&#8221;16px&#8221;][vc_column_text]Although cook-chill can prevent a lot of contamination, <strong>safety concerns still exist during preparation<\/strong>, and almost all of them are related to people (i.e. washing hands, cleaning surfaces, avoiding cross-contamination between foods). <strong>The cook and chill process requires constant vigilance<\/strong>.<\/p>\n<p><strong>These features must be leveraged for a correct approach to cook and chill processes. Without them you risk losing time and money to processes that are unnecessary.<\/strong>[\/vc_column_text][vc_empty_space][elx_heading text_color=&#8221;inherit&#8221;]What is the difference between cook-chill and cook-freeze?[\/elx_heading][vc_empty_space][vc_column_text]The purpose of <strong>the cook and chill method is to safely preserve food for later consumption<\/strong> that may involve reheating.
