A cooking visionary, yet effortlessly relaxed in equal measure, his latest venture marks a bold reimagining of the London restaurant scene.<\/span>[\/vc_column_text][\/elx_simple_block][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text]<\/p>\n<h2><strong><em>Delivering such a forward-thinking concept which lays bare the inner-workings of a professional kitchen cannot be achieved without a state-of-the-art heart. Here is how Nuno Mendes turned to Molteni to make his dream a reality. <\/em><\/strong><\/h2>\n<p>[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][elx_heading text_color=&#8221;food-solutions&#8221;]The memory[\/elx_heading][vc_column_text]\u201cGrowing up in Portugal, there was a ritual which was on Sundays, we always gathered around a large table \u2013 mostly composed of family and some friends. It was the highlight of the week,\u201d begins Nuno.<\/p>\n<p>\u201cMy grandmother would put some amazing dishes on the table, my father would help, everyone would go into the kitchen \u2013 it would be one of those four or five-hour lunches that goes into dinner. It felt like a celebration. For me, most of my memories of childhood were sitting round a table,\u201d[\/vc_column_text][\/vc_column][vc_column width=&#8221;1\/2&#8243;][elx_video_block background_image=&#8221;11732&#8243; video_link=&#8221;https:\/\/www.youtube.com\/watch?v=1uGK9Vd1pwk&amp;feature=youtu.be&#8221; minimum_height=&#8221;350px&#8221;][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text]With such a diverse collection of restaurants in a compact geographical area, Redchurch Street is just a snapshot of London\u2019s eclectic dining scene.<\/p>\n<p>Nuno continues: \u201cIn a city like London it\u2019s so hard to gather enough people around a table to create an experience. This is why for a while I\u2019ve been thinking about developing a concept that is built around a table.\u201d[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][elx_heading text_color=&#8221;food-solutions&#8221; text_align=&#8221;text-center&#8221;]The concept [\/elx_heading][vc_column_text]The 16-seat site comprises of a fully-open professional kitchen, dining room and wine room, all behind a door that would be hard to spot if you didn\u2019t know it was there.<\/p>\n<p>\u201cLike in any good dinner party, you enter and go straight into the kitchen. Usually the hosts are busy finishing off things in the kitchen, so you come in and someone will open a nice bottle of wine or offer you a cocktail, and you start there. If someone\u2019s cooking something, they\u2019ll give you a nibble \u2013 \u00a0\u2018try this, try that\u2019 \u2013 so it\u2019s a natural flow of a gathering. We wanted to recreate that in a similar way, not too gimmicky or forced, but natural,\u201d says Nuno.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_single_image image=&#8221;11738&#8243; img_size=&#8221;full&#8221;][\/vc_column][vc_column width=&#8221;1\/2&#8243;][vc_column_text]At the heart of the M\u00e3os kitchen lies a state-of-the-art Molteni 1923 series stove, made bespoke to Nuno\u2019s exacting standards in a small factory in France. With the freedom to commission every tiny detail, from deciding the exact mix of direct and indirect cooking surfaces, through to the size, shape and finish of the stove\u2019s rails, handles and control knobs, the finished article is completely unique to M\u00e3os. Combining a plancha, for direct and indirect cooking; with three cast iron hotplates and a static oven, the Molteni is the real engine of the M\u00e3os kitchen, and allows the team to undertake a huge variety of processes from a relatively compact footprint.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][elx_image_block background_image=&#8221;11742&#8243; minimum_height=&#8221;300px&#8221;][\/vc_column][\/vc_row][vc_row][vc_column][elx_heading text_color=&#8221;food-solutions&#8221;]The heart of the kitchen. [\/elx_heading][vc_column_text]\u201cTo work with such a tool is incredible. Every day we come in and we see it, it reminds us of how fortunate we are. It\u2019s very much the workhorse \u2013 but an amazing workhorse \u2013 and it\u2019s the one that we rely on the most. If we were stripped out of the Molteni, we\u2019d be crippled,\u201d Nuno continues.<\/p>\n<p>With a deep blue one-piece enamel construction, coupled with sleek stainless steel and chromium trim, the Molteni also acts as striking centrepiece to the kitchen.<\/p>\n<p>\u201cWhen the guest walk in, they can go straight up to the Molteni and go \u2018What\u2019s that? What are you cooking on?\u2019 and ask questions. Sometimes we sear things and carve it straight for them, if they want to try something \u2013 it\u2019s very interactive. I think it breaks down the barriers \u2013 the formality \u2013 that often comes with the food,\u201d adds Nuno.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_single_image image=&#8221;11746&#8243; img_size=&#8221;large&#8221;][\/vc_column][vc_column width=&#8221;1\/2&#8243;][vc_column_text]\u201cWe wanted to have a menu that was free. We didn\u2019t want to say we were going to be Portuguese, Japanese, or whatever. I don\u2019t think we have a label. I\u2019ve never actually thought about it \u2013 I don\u2019t know how we would call ourselves,\u201d he concludes.<\/p>\n<p>\u201cWhat are we? Are we Portuguese? No, we are not. I am Portuguese but the menu\u2019s not. Are we Japanese? No we\u2019re not, but we like Japanese products. Are we British? Yes, 100%. Most of our produce is British, and grown on small farms. So what are we?
